- 3 tsp. vanilla essence (pure)
- 1 1/2 cups water (or cooled coffee)
- 150 grams dark chocolate (chopped, 50-60% cocoa solids – use dairy-free if needed)
- 125 grams butter (or dairy-free olive oil spread, or 150ml coconut cream)
- 2 Tbsp. olive oil (grape seed oil or rice bran oil)

Lovely moist cake that was a hit all round. Great for anyone that suffers from allergies. I recommend this recipe.

Even though the cake turned out to be, soft and moist, 1 tsp vanilla essence is enough, 3 tsp vanilla essence is way too much and completely over powered the cake.. It was impossible to eat it
