This was amazing. I've been lactose intolerant for 5 years now, and thus it has been 5 years since I last tasted alfredo sauce. I've tried many dairy free alfredo sauces (most using things like cashew and cauliflower), which never quite tasted authentic. Still good, but definitely not alfredo. I would often resort to adding parmesan or other dairy anyways (much to my later detriment.) Also a major difficulty with those is it's hard to get the sauce completely smooth without a fancy, high-powered blender. This was smooth, rich, and flavorful. I loved it. I've been searching for this kind of recipe for years... I almost cried. >.<

it was really good i just added mushrooms and some other spices. even for 19 month she ate it all. we have recently gone none dairy and its been hard to find good recipes. it was amazing.
