Lighter on sodium but not on taste! This mac and cheese is perfect for those watching their salt intake. The recipe is a Yummly original created by Sara Mellas.
Ingredients

- nonstick cooking spray
- 10 oz. swiss cheese (10 oz. is about 1 1/4 cups shredded)
- 10 oz. sharp cheddar cheese (10 oz. is about 1 1/4 cups shredded)
- 2 oz. cream cheese
- 1 lb. elbow macaroni
- 6 Tbsp. unsalted butter (for sauce)
- 1/2 cup all-purpose flour
- 4 1/2 cups whole milk
- 1/2 tsp. mustard powder
- 1/2 tsp. salt (for sauce)
- 1/4 tsp. black pepper (or white pepper)
- 4 oz. reduced sodium round buttery crackers (Like Ritz Hint of Salt, 4 oz. is about 36 crackers)
- 1/4 cup unsalted butter (for topping)

Directions
- Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
- Bring a large pot of water to a boil and add the salt.
- Using a cheese grater or food processor fitted with a grating attachment, grate the Cheddar and Swiss cheeses. Set aside.

This was excellent and easy to make! definitely will be making it agaim! I might swap the swiss cheese with something else, but that's just my preference 😊

Very creamy sauce. We used shells instead of elbows and 2% milk instead of whole but still turned out nicely. Garnished with some parsley for serving.
