- 5 lb. beef roast
- 1 1/2 cups beef broth
- 1/2 cup brown sugar
- 1/4 cup balsamic vinegar
- 1 Tbsp. soy sauce
- 1 tsp. salt
- 1/4 tsp. crushed red pepper flakes
- 3 cloves garlic (pressed)
- 1 lb. baby carrots
- 2 lb. baby red potatoes (quartered)
- 1 onion

Directions
- In a small bowl whisk together beef broth, brown sugar, balsamic vinegar, soy sauce, salt, red pepper flakes and garlic
- Place beef roast in crock pot. Top with carrots, onion (sliced) and potatoes. Pour liquid mixture over the beef, carrots and potatoes.
- Cook on low for 6-8 hours.

This was amazing! I had to leave it in for a little longer because the meat wasn’t as tender as I like but otherwise this is a great meal. I also get a slightly smaller cut of meat because if I didn’t all the ingredients wouldn’t fit into my slow cooker! So keep that in mind as well. This was a fantastic mix of flavors and the tiny bit of sweetness was a much loved addition!
