- 1 lb. 90% lean ground pork
- 2 tsp. olive oil
- 1 cup white onion (chopped)
- 2 cups new potatoes (cooked, cut into 1/4-inch cubes)
- 1 1/4 cups tomatillo salsa
- 1 cup frozen corn (thawed)
- 1/4 cup cilantro
- 1/4 cup queso fresco (crumbled)

Directions
- Heat olive oil over medium heat in a large skillet; add onion and sauté for about 5 minutes.
- Add ground pork, breaking into crumbles with the back of a spoon and turning frequently until browned on all sides.
- Add potatoes, salsa and corn; stir and cook 10-15 minutes or until heated through. Fold in cilantro and sprinkle with cheese. Serve immediately.

Wasn't hard for me to make. Used salsa verde and feta cheese as substitutes as that's what I had on hand and could find easily. This would make an EXCELLENT breakfast burrito filler. Had it over white rice and paired with Cuban black beans. Very filling dinner.

It turned out good, I ended up having to boil some potatoes halfway through because I didnt read the ingredient list very well. I think step one should be to cook some potatoes.

This was very tasty. I parboiled the potatoes so it cooked faster. I scarmbled eggs to serve with it and everyone loved it.

This turned out great and came together quickly. My only suggestion is to somehow reduce the salt. It was a little salty

I added Chorizo which was a nice touch! potatoes take a little longer to cook so i recommend cooking those first. Girlfriend loved it since it had all her favorite ingredients.

My Colombian husband and I loved it but we agreed that it is not really a Cuban dish. Next time I will be sure to have some fried plantains on the side!

The pork and corn had some great flavor, combined with the salsa and cheese. I didn’t cook the potatoes beforehand so they were still a little firm. Next time I’d do those in a separate pan to soften and brown them up
