I tasted it when I added the green onions and it needed more flavor. I doubled the red pepper flakes and brown sugar which made it taste better. I will make this again it was delicious.

I’ve done this a few times now. Always a big winner as a party dish… cut into bite sized pieces. Never a piece left. However I’ve made a big change. I usually serve five or more things at a party and leave this to last. To get it to time perfectly… i do two things… I score the skin and completely remove. I left it dry out in the fridge while I marinate the pork bites. I usually marinate at least two nights. Then I start cooking an hour before my guests arrive at a very low temp.. 125c. Both the pork bites and the cracking. At this low temperature the fat renders nicely and I have more time to watch the pork to make sure it doesn’t overcook. I can usually serve an hour and a half after guests arrive. If it hasn’t caramelised by then… up goes the oven for ten minutes. Perfect every time.

So so so so tasty! I added some Panko with the chives and it added such a nice crunch to the dish! I served it with steamed white rice! I’ll definitely make it again!
