I made these just this morning and wow they are so good!!! I am no cook, but I followed this recipe with a few of my personal modifications and they turned out amazing. I didn't have cilantro so I left that out and put grated cheese in the mix instead. I used half a dozen eggs instead of the dozen eggs and I still got 8 muffins out of it. The only thing I measured out was the spinach, but other than that I just eyed everything and went with it. I also still used two pieces of bacon even with half the recipe and it was perfect. Super quick and easy to make. If I can make these and have them actually taste awesome, then anyone can do the same.
