- 1 cup brown rice (uncooked)
- 1/2 lb. ground pork (or beef, or turkey, or chicken - any ground meat will do!)
- 1 1/2 cups mushrooms (cut into chunks or slices)
- 1/2 medium onion (sliced into wedges)
- 1 cup carrots (julienned, or cut into match sticks, I used a julienne peeler)
- 3 Tbsp. fresh ginger (grated)
- 2 cloves garlic (minced or grated)
- 3 cups bok choy (leafy greens -, spinach, kale, collards, etc., I used half bok choy and half spinach, which came to $1.50)
- 3 Tbsp. soy sauce (divided)
- 1/2 Tbsp. vinegar (I use rice wine vinegar, but white or apple cider should do)
- 1/2 tsp. chili powder (or red pepper flakes)
- sesame seeds (optional)
- green onions (optional)

This is so easy. Didn’t have pork so used ground turkey, also no fresh ginger but used dry. Had broccoli and carrots on hand. Doubled the garlic….very fast and tasty!

Very good. Seasoned the pork w/ carribean spices. Made it w/ spinach, red onions, carrots, zucchini and mushrooms. added a little hoisin sauce for a touch of sweetness.

I supposed this a healthier version of stir fry. It’s lacking in flavor but I have all the ingredients handy so I gave it a go.

Loved this! Made some adjustments based on what I had on hand, but a keeper!! Will now be on a regular rotation!! I am not asian, so i never learned the “tricks” behind some of those flavors!! But this tasted authentic, so I will learn from this! Thanks!

Very flavorful...a big hit! My family doesn’t like obvious mushrooms so I chopped them up finely and added them to the meat mixture when browning. Gives the taste of mushrooms without the texture. Bok choy is a fun addition. I will make this again.

Turned out really well. I used purple cabbage with the carrots for color, and added kale and spinach for the greens.

Quick and easy, very important when cooking for 10. Also, substitutions are easy as shown by the othet comments. Lastly, was enjoyed, or accepted by all. Dean

It was easy to make and delicious! I sautéed the mushrooms with sesame oil and soy sauce for extra taste. Will make again!

Simple and delicious! Used broccoli, green beans, and snap peas in place of the mushrooms. Cannot wait to make this again!

Delicious and easy family meal! Used veggies I had on hand: carrots, broccoli slaw, baby kale, and frozen sugar snap peas. Also used Harissa chili paste in place of the chili pepper/flakes. Will definitely make again!
