Description
Simple, flavorful bone-in pork chops roast on a sheet pan with an array of colorful vegetables. The recipe is a Yummly original created by Sara Mellas.

- 1 1/2 lb. mixed vegetables (like broccoli, cauliflower, bell peppers, carrots, zucchini, etc.)
- 1 1/2 Tbsp. extra-virgin olive oil (for vegetables)
- 1/2 tsp. salt (for vegetables)
- black pepper (for vegetables)
- 4 bone-in pork chops (about 1 inch thick)
- 1 tsp. salt (for pork chops)
- 1/2 tsp. black pepper (for pork chops)
- 1/2 tsp. garlic powder
- 1/2 tsp. paprika
- 3 tsp. extra-virgin olive oil (divided, for searing chops)

Directions
- Preheat the oven to 400°F.
- Line a large baking sheet with parchment paper.
- Cut the vegetables into uniform pieces. For vegetables like broccoli and cauliflower, cut into 1-inch florets. Slice carrots 1/4-inch thick. For zucchini and summer squash, slice 1/2-inch thick. Cut bell peppers or onions into 1-inch strips. Halve Brussels sprouts, etc.

Used boneless porkchops and adjusted the time from 7 minutes to about 4 minutes and everything came out wonderful

I used roasting veggies that called for 450, 20 min, so I did that. added potatoes. The pork chops were tough. smelled good.

It was awesome, and so easy! It's surprising how quickly it all came together and cooked up! And the pork chops didn't splatter as much grease, because I used to think I needed more [too much] oil in the pan.
My family was very happy with the taste! I Everybody eagerly ate several kinds of fresh veggies, with no leftovers! I never really knew about "sheet pan suppers" until I found them on Yummly! Thank you!

This is delicious, I'm not a seasoned cook but this came out perfect. I added some minced garlic and garlic powder because my family loves garlic, and I used zucchini, carrots, onions and broccoli for the veg. My 8 year old also loved it and cleaned his plate, perfection!!

This is fairly easy to make. You can use lots of different vegetables.
I seared my pork chops then dredged them in breadcrumbs flavored with paprika, garlic powder salt and pepper.
Baked until meat was 135-140 F .

It was awesome! I cut up a few Baby Bella mushrooms & yellow onion to add with the broccoli, zucchini & red bell pepper. the Pork Chops were very moist

Fast, easy and delicious! it was a big hit with my crew. Dinner was on the table in about 30 minutes. Even had time to make a Peach Cobbler for dessert. i served it with stuffing and string beans; instead of, the roasted vegetables.

Amazing recipe and sooooo easy to make. I also love how easy it is to customize it (different veggies/different seasoning). You could also serve with BBQ sauce or make a pot of rice to stretch the recipe for more people. Will definitely be making this again!!!

Pork was very tender and juicy! Husband loved it. Added lemon pepper seasoning to veggies and served with cheesy mash potatoes 👍🏼
