- 3 Tbsp. olive oil
- 1 yellow onion (large, chopped)
- 2 cups spanish rice (or short grain rice, soaked in water for 15 minutes and then drained)
- 4 garlic cloves (chopped)
- 2 pinches saffron threads (Spanish, soaked in 1/2 cup water)
- 1 tsp. paprika
- 1 tsp. cayenne pepper
- 1/2 tsp. pepper flakes (aloppo)
- salt
- 2 Roma tomatoes (large, finely chopped)
- 6 oz. french green beans
- 1 lb. prawns (or large shrimp or your choice, peeled and deveined)
- 1/4 cup fresh parsley (chopped)

I’ve made this a few times, cut in half for two, I use just shrimp and some seafood stock to replace the lobster water. Do it all in a 10 inch cast iron frypan which leaves a nice authentic black crust.

would give 5 stars but instructions weren't the best when it came to the saffron. The water-rice ratio was easy enough to figure out. I thought it was absolutely delicious, the rest of my family said it was too spicy. Also didn't spring for lobster and used a smoked sausage instead of using chorizo because my family is sensitive to spice.

So we learn about the unknown origins of the paella and some other nonsense but we don’t get instruction on how much water to use to make rice. Huh?

Would have turned out better if I knew how to prepar the saffron. I added the 2 pinches not knowing how strong it is. Will adjust quantity and preparation differently.

Tastes pretty good but...
- expensive
- lots of prep
- poor vague directions
I'll probably give it another try though without expensive saffron and lobster, less onions and using whatever veggies I have lying around rather than purchasing something.

came out great! Didn’t use lobster because the family doesn’t like it so I used broth instead of the lobster boiling water!

Very tasty. Used crab claw meat instead of lobster. Also used basmati rice that I precooked and added last. For the lobster water I used organic tomato basil soup. Hubby loved this.

Good taste but only because of my master skills...lol. Directions are kinda vague. People try to tell too much of a story instead of just laying out the directions! Small example...water used to boil lobster. How much you use is left to you because no suggestions are made. I think I ended up using 2 cups, didn’t want a “soupy” dish.

Well is a good rice recipe and has nothing to do with a paella but the rice and the saffron.

I’ll let you know once I taste it smells amazing looks delicious. I didn’t have lobster so I used other seafood and I had some frozen crab shells from a month ago and I boiled that and made stock out of it that’s what I used instead

I will make this again. It was very good. I did make some adjustments because saffron is so expensive. I bought a boxed Spanish rice and then added the recipes ingredients, I sautéed onions and then added garlic to soften it. I precooked green beans. I added extra seasoning.

Excellent!! Served at dinner party with rave reviews. Very easy to prepare; I used paella rice & substituted a quality seafood flavored base with shrimp, mussels & squid, omitting lobster ordeal. Leftovers were fantastic too!
