Description
Got a jar of everything bagel seasoning hanging out in the cupboard? How about sprinkling it on tofu and veggies for a flavorful sheet pan supper? A little cornstarch helps make the crust crispy. To serve 4 people you’ll need 1 1/2 blocks of tofu (about 22 ounces); refrigerate leftover tofu covered in water to keep it fresh. If your market doesn’t sell tahini sauce, make your own by stirring together 1/2 cup tahini, 1/3 cup water, 2 tablespoons lemon juice, and 1/4 teaspoon salt. - 22 oz. extra-firm tofu (1 1/2 blocks, each 14 oz., drained)
- 1/4 cup extra-virgin olive oil (divided)
- 3 Tbsp. everything bagel seasoning (plus more for serving)
- 2 Tbsp. cornstarch
- 1 tsp. salt (divided, plus more to taste)
- 4 medium carrots (1/2 lb.)
- 4 cups broccoli florets (9 oz.)
- 1 small red onion (sliced about 1/2 inch thick)
- 1/4 tsp. black pepper
- Tahini (store-bought or homemade, for serving)

Directions
- Preheat oven to 425°F with a rack set in center and set a sheet pan in oven while it heats.
- Cut tofu into pieces about 1 1/2 inches tall and 3/4 inch wide and thick. Lay a kitchen towel on a work surface. Arrange tofu on top in a single layer, cover with towel, and press lightly with your hands to remove liquid from tofu. In a large bowl, gently turn tofu with 2 Tbsp. olive oil to coat, using a rubber spatula or your fingers. In a small bowl, combine 3 Tbsp. everything bagel seasoning, the cornstarch, and 1/2 tsp. salt. Sprinkle it evenly over the tofu, turning tofu as needed, until it’s evenly coated.
- Carefully remove hot sheet pan from oven. Arrange tofu over one-third of the pan. Bake tofu until it’s lightly browned on the underside (lift to check), about 15 minutes.

the veggies were unimpressive, pretty plain, but the bagel seasoning was s nice touch on the tofu. I'll use it again.
