- 1/2 cup tapioca starch
- 3 tsp. baking powder (certified gluten-free, if necessary)
- 3/4 tsp. salt
- 6 eggs (at room temperature)
- 1/2 cup coconut oil (melted and cooled, or vegetable/canola oil)
- 1/2 cup honey
- 1 cup milk (at room temperature)
- 1 1/2 tsp. vanilla
- 1 tsp. cinnamon
- 4 bananas (very ripe, mashed, mine were large, about 2½ cups)
- 1 cup pineapple (chopped)
- 1/2 cup chopped pecans
- 8 oz. cream cheese (at room temperature, I used light)
- 1/2 cup plain greek yogurt (I used nonfat)
- 2 tsp. vanilla extract
- 1/4 cup honey
- 1/2 tsp. cinnamon
- 1 pinch salt
