- 1 Tbsp. extra-virgin olive oil
- 1 tsp. dried oregano
- 1/2 tsp. dried thyme

- 1/2 piece cucumber (large, unpeeled and grated)
- 1 cup greek yogurt (plain full-fat, or coconut yogurt)
- 2 pieces large garlic cloves (finely minced)
- 2 Tbsp. extra-virgin olive oil
- 1 Tbsp. white vinegar
- 1/2 tsp. salt
- 1 Tbsp. fresh dill (minced)
- 1 bag cauliflower rice (thawed)
- 1/2 piece cucumber (medium, unpeeled and diced)
- 1 cup tomatoes (diced, about 2 Roma)
- 1 1/2 cups chopped flat-leaf parsley
- 1/4 cup mint leaves (chopped, optional_, optional)
- 2 pieces scallions (white and pale-green parts only, sliced thin)
- 1 piece garlic clove (minced fine)
- 2 Tbsp. extra-virgin olive oil (divided)
- 1/4 tsp. finely grated lemon zest
- 2 Tbsp. fresh lemon juice
- 1/4 tsp. crushed red pepper flakes
- 1 tsp. salt (plus more to taste)
- 3 Tbsp. hummus (or baba ganoush, about 2-3 tablespoons per bowl, about 3/4 cup total)
- 5 pieces Kalamata olives (about 5 per bowl)
- 1 piece crumbled feta (if desired, optional)
- coconut cream (from one can of full-fat coconut, about scant 1 cup)
- 1/2 cup cucumber (grated)
- 2 cloves garlic (minced fine, about 2 teaspoons)
- 4 Tbsp. fresh lemon juice
- 1 tsp. dried dill (or about 2-3 teaspoons fresh dill, minced)
- 1 1/2 tsp. salt
- 1/4 cup mayonnaise (Whole30-compliant)
- 1/4 cup fresh flat-leaf parsley (chopped optional)

I sautéed the cauliflower for.a bit to make the tabouli because I don't like it raw. Otherwise, I kept to the rest of the recipe and it was delicious! I will be making this again. My husband really enjoyed it as well.

Delicious! My entire family loved this chicken! Typically it's so hard to get my kids to eat chicken with zest, but they finished every last bite! Love these flavors.

Love this meal prep . I have made it about 3 times now. I love the cauliflower tabouli. So tasty .
Everything is delicious. Only would have liked a hummus or baba ganoush recipe. I do make them myself, but I’m so impressed with the tabouli here I would be curious how delicious it would be here.

So, It's Good meal prep, but chicken is too lemonish, even for 1/3 of lemon quantity. I changed cauliflower rice for bulgur and it turned very tasty and hearty. 👍🏻

It was delicious. There were rwo ingredients that were listed but not used: mayonaise and can of coconut, both listed in the yummly recipe but not in the directions.

This meal is amazing! I love Greek food but don’t get to enjoy it as often as I’d like. This recipe will be a frequent star in my meal planning, making it easy to enjoy any time.

So yummy and easy! Made it exactly like the recipe suggests except had to use dried dill in the tzaziki since the market was out of fresh dill, still very good.
