- 1 rotisserie chicken (meat removed and shredded, discard the skin and bones, or 1 lb boneless, skinless chicken breasts, cooked and shredded)
- 1 cup kale (sautéed/steamed, frozen chopped kale is my go-to)
- 1 cup sour cream
- 2 cloves garlic (chopped)
- 3 cups enchilada sauce (green chile, I like Hatch brand, a little less than 2 -15 oz cans)
- 2 cups pepperjack cheese (shredded, can also use Monterrey jack)
- 2 cups shredded mozzarella cheese
- 3/4 tsp. salt
- 1/2 tsp. chili powder
- 1/4 tsp. smoked paprika
- 1/4 tsp. pepper
- 1/2 tsp. cumin
- 8 tortillas (Siete Siete grain free, Flour or corn tortillas will work also)
- chopped cilantro (optional)
- jalapeños (optional)
- lime (optional)
- avocado (optional)
- Mexican crema (optional)
