Yummy! I love an intense matcha flavor so I used 3 tablespoons matcha and added some lemon zest to complement the matcha flavor. I did not use icing as I prefer tea cakes without icing. As result, the cake started to dry out one day later. Next time will sub 1/2 cup honey + 1/2 sugar for the 1 cup sugar. Hopefully this will keep the cake moist and add additional depth to the flavor of this cake. Thanks for a great green tea cake recipe!
