Who doesn’t love tacos, especially when they’re made with tender grilled pork rubbed with an aromatic blend of cumin, oregano, onion powder, and ground chipotle for a touch of smoky heat? You’ll slice the meat thinly, then tuck it into soft flour tortillas with a fruity and gently spicy mango salsa. The recipe is a Yummly original created by David Bonom.

- 1 large mango (ripe)
- 1 serrano chili
- 1/4 cup diced red onion
- 2 Tbsp. chopped fresh cilantro (plus cilantro sprigs for serving)
- 1 Tbsp. fresh lime juice
- 1 tsp. salt (divided)
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1/2 tsp. onion powder
- 1/4 tsp. chipotle chili (ground)
- 1 pork tenderloin (about 1 1/2 lb.)
- 8 flour tortillas (about 5 inches wide)

Directions
- Preheat a grill for medium-high heat (350° to 450°F).
- Peel, pit, and cut mango into 1/4-inch dice. Seed and finely chop serrano chili. In a medium bowl, combine mango, serrano, onion, chopped cilantro, lime juice, and 1/4 tsp. salt. Set salsa aside.
- In a small bowl, combine remaining 3/4 tsp. salt, the cumin, oregano, onion powder, and ground chipotle. Rub mixture over pork tenderloin to coat.
