Who doesn’t love tacos, especially when they’re made with tender grilled pork rubbed with an aromatic blend of cumin, oregano, onion powder, and ground chipotle for a touch of smoky heat? - Preheat a grill for medium-high heat (350° to 450°F).
- Peel, pit, and cut mango into 1/4-inch dice. Seed and finely chop serrano chili. In a medium bowl, combine mango, serrano, onion, chopped cilantro, lime juice, and 1/4 tsp. salt. Set salsa aside.
- In a small bowl, combine remaining 3/4 tsp. salt, the cumin, oregano, onion powder, and ground chipotle. Rub mixture over pork tenderloin to coat.
