Delicious! I added some extra bell peppers and forgot to add the cotija cheese. The extra saltiness from the cheese would've been perfect.
Since I didn't make the recipe as written I can't give it 5-stars

I added toasted sourdough, cucumber, and tomato to make a panzanella style salad. Nice light quick!

Nice salad that is fast to prepare. I may add tomatoes, garlic and pepper next time. It is a lot of chickpeas, so tomatoes would be a great addition if eating this as an entree.
