Description
Your favorite new sorbet is just a blitz away in your food processor. Bonus: there’s no refined sugar added, just frozen mixed berries, a little honey, and a pinch of salt. A splash of warm water helps to get the frozen fruit moving in the food processor, but you’ll also need to stop and stir things up to make sure the sorbet gets silky smooth. If your family isn’t a fan of seeds in their sorbet, substitute strawberries for the raspberries. Freeze any leftover sorbet for later, or pour it into popsicle molds and freeze for a handheld treat. The recipe, which makes 2 1/4 cups, is a Yummly original created by Ivy Manning.
Ingredients
- 2 cups frozen blueberries (8 oz.)
- 2 1/4 cups frozen raspberries (8 oz.; or use strawberries)
- 1/4 cup water (hot tap water)
- 2 Tbsp. honey (or 3 Tbsp. if berries are quite tart)
- 1 pinch salt
Directions
- Let frozen berries stand at room temperature for 10 minutes.
- Combine berries, hot water, honey, and salt in a food processor. Pulse in 1-second bursts, stopping occasionally and using a rubber spatula to push the fruit towards the blade, until the mixture is ground into small pieces. Turn the processor on and whirl until all the berries are blended and the mixture is smooth, stopping if needed to break up clumps, 4-5 minutes.
- Serve sorbet immediately for a soft-serve texture. Or transfer it to an airtight container and freeze at least 30 minutes for a scoopable texture. You can also freeze the sorbet in popsicle molds. Sorbet or popsicles keep, frozen airtight, up to 3 months; let them stand at room temperature for 10 minutes before serving to soften.
