I pulled cooked for 20 and let sit for 1.5 hours in the oven and it was already at 150! So I think I will check it after 1 hour because I like it rarer.

Turned out a wee bit more overdone than we like but very good. I don’t care for the flour on the outside as not all of it made a crust. Next time I will use oil. I did add two minutes to the time since I fiddled with two large potatoes to bake with it. Hubby said I let all the hot air out. I won’t do that next time. And by the way, the potatoes needed to go in the microwave after as they still weren’t cooked. Also my oven was totally cool at two hours so I might only go 1.5 hours next time.

Perfection! I did mix a little Cajun seasoning in the rub and it came out perfect!
