Description
Kissed with a simple blend of honey and olive oil, the humble carrot becomes something to celebrate in this side dish. Buy carrots that are relatively the same size, is possible, but don’t worry if there’s a jumbo one in there — just cut it down to about the same thickness as the others so all the carrots roast evenly. The recipe is a Yummly original created by Ashley Strickland Freeman.

- cooking oil spray (or a little vegetable oil)
- 2 lb. carrots (whole, 3/4 to 1 inch wide)
- 1/4 cup honey
- 3 Tbsp. extra-virgin olive oil
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- chopped fresh parsley (for serving)

Directions
- Preheat oven to 425°F with a rack set in the center. Coat a sheet pan with cooking spray.
- Peel carrots if you like, and trim the stem ends. Cut any large ones (1 inch or greater) lengthwise into 1/2-inch-thick pieces (leaving them long). Arrange carrots on the prepared pan.
- In a small bowl, stir together honey and olive oil. Pour evenly over the carrots and toss to coat. Sprinkle carrots evenly with salt and pepper and toss again.
