- 1 medium carrots (about 1 cup, chopped)
- 1 celery stalk (large, about 1 cup, chopped)
- 2 cloves garlic (minced)
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. dried oregano
- 3/4 tsp. dried thyme
- 32 oz. diced tomatoes (I usually use fire-roasted or Italian-style)
- 3 Tbsp. tomato paste
- 1 bay leaf
- 32 oz. low sodium vegetable broth (carton, 4 cups)
- 1 medium zucchini (around 2/3 cups, sliced into halves or quarters)
- water (add only as much as needed to cover vegetables)
- 1/4 cup red kidney beans (canned or cooked, drained and rinsed)
- 1/4 cup cannellini beans (canned or cooked, or great northern beans, drained and rinsed)
- 1/2 cup small shell pasta (cooked to al dente, **, use gluten free if necessary or leave out and add chopped potatoes or cauliflower instead**, see note about freezing)
- 1 cup baby spinach (fresh, chopped, optional)
- 1 tsp. balsamic vinegar (optional but adds great flavor)
- grated Parmesan cheese (or Shredded, for serving)
- fresh parsley (finely chopped, for garnish, optional)

Yummy! But next time, I will double it so I can have leftovers and not use zucchini because it gets mushy

It’s good. Needs a little more flavor. I prefer doing the pasta separately, even if it means cleaning more dishes, otherwise there is that gummy texture.

Loved this recipe, so easy and delicious. I used more stock to make it a little more brothy but very hearty.

Yum! I added 1 cup of pasta instead of half, I also added the ful can of each of the beans. I added the 32 oz vegetable broth. Salt and pepper at the end, it was great!

I loved it!! Made it as stated with fresh ingredients. Baguette bread and fine Cabernet compliment this dish perfectly.

It’s was good but didn’t have the depth of flavor I would had expected. We have leftovers I’ll try adding some chili oil

Made the on-the-stove method...wonderful. Only thing I changed was that I left out the spices, and used the canned diced tomatoes that already had those spices in them. I had company that loved the soup. Thanks for the recipe.
