    We make this frequently for dinner. The guys thought it was missing something the first time I made it. Now, I brown ground pork, crumbling it as small as possible with some salt, pepper, Italian seasoning, and red pepper flakes. I let it go until it gets crispy. I add it back to the pan just before the eggs and it gives a fantastic sausage vibe.

    Very tasty, though I tweaked mine a little by using petite diced tomatoes and threw in a little Ras Al Hanout spice
