- 1 rotisserie chicken (shredded, bones and skin discarded)
- 1 roasted red pepper (large, cut into thin strips, from a jar is great)
- 1/2 cup red onion (thinly sliced)
- 2 Tbsp. capers
- 1/2 cup Kalamata olives (chopped)
- sun dried tomatoes (or * 1/2 cup dehydrated, if they’re sun-dried, just pat them dry)
- 1 cup fresh parsley leaves (loose, give or take)
- 1/3 cup candied almonds (sliced)
- 3 Tbsp. red wine vinegar
- 4 Tbsp. honey
- 1/2 cup virgin olive oil (extra-, or more if needed)
- 2 Tbsp. fresh lemon juice
- 1 pinch coarse salt (and freshly ground pepper)
- 1 head Boston lettuce (rinsed and leaves separated)
