Complete this soup with warmed Italian bread and salad of mixed greens.

- 2 boneless pork chops (cubed)
- 15 oz. chopped tomatoes (undrained)
- 29 oz. chicken broth
- 2 Tbsp. dried minced onion
- 15 oz. cannellini beans (OR great Northern beans, drained and rinsed)
- 8 oz. fresh spinach leaves (torn)

Directions
- In a deep saucepan, brown the pork in a little oil; add all ingredients except spinach; bring to a boil, lower heat and simmer for 15 minutes; stir in torn spinach and cook for 2 minutes more.
- Optional serving suggestion - top with a sprinkle of grated Parmesan cheese just before serving.

I used pork tenderloin (seasoned while browning) and the colored pepper strips someone else recommended, as well as, fresh garlic, cumin & paprika. I also seasoned the heck out of it with pepper, Italian seasoning, oregano, 1 bay leaf, pink Himalayan sea salt and salt free Spike seasoning blend. I still wasn’t sure my family would like it after all of that so I made it a creamy soup by adding 1 C half & half and shredded white cheddar cheese. It was delicious.

Like others, I added garlic powder, Italian seasoning, salt and pepper. Very tasty.

Recipe made for a very boring soup. I ended up adding salt, quite a bit of pepper, garlic, and italian seasoning.

Easy and good. I used chicken instead lf pork and added some ginger, pasley and scallions.

soooo easy and sooo good. my family absolutely loved it, there was plenty for our family of four. i had some left over pork and chicken fajitas from the night before that i didnt want to go to waste so i chopped it all up and threw it in. everything else i followed to a T. will definitely be making again and soon!

This soup was so simple, cheap, quick and easy to make! It tasted great! I did make some changes. I doubled up the recipe except for the beans. I’m not a big fan of beans so I kept that amount the same. I’ve never tried Canelli beans but they are actually pretty good. I browned the pork with garlic salt and black pepper. I accidentally purchased minced garlic instead of onion so I used that instead (less than 2 TB of course). Also I added a bag of “pepper strips” which are the tri color bell peppers. I added some red pepper flakes as well for spice.

Easy to make! The only alterations I made were: I cooked the pork chops with a packet of Good Seasons Italian dressing, used beef stock, and added oregano while it simmered. Recommend the Parmesan garnish before serving. Fabulous soup! Will make again!!

Super delicious! I definitely recommend this soup! My whole family loved it and i have already made it twice. It’s also very cheap! I also added a bit of paprika powder and cumin.

Oh sweet mother of ..... this is the BEST soup I have made to date from the yummly app. Super simple and of meager ingredients. I doubled the recipe and used just a shy over 2 lbs of pork loin. I didn't have the dried minced onion so I subsituted minced red onion. 6 adults have 3 bowls each and just a tad was left over. Yum, stupendous, mmm-marvilous! Don't forget the cheese at the table. Its certainly sets it worlds apart!
