- 1 Tbsp. olive oil (light flavor)
- 3/4 cup onions (thinly sliced)
- 2 carrots (medium size, very thinly sliced into 2" matchsticks)
- 2 cloves garlic (minced)
- 3 stalks green onion (cut into 1" lengths)
- 1/2 cup baby bella mushrooms (thinly sliced)
- 1/2 lb. spinach (washed and drained well I used a large bunch of Japanese spinach, stems removed and chopped bite size. Baby spinach leaves would work as well.)
- 3 Tbsp. soy sauce
- 3 tsp. sugar
- 1 Tbsp. sesame seeds (optional)

This was absolutely delicious.

Needed a little bit more sauce but was overall very tasty. Served with grilled Korean pork chops.
