Description
These Korean-flavors-marinated pork chops with a spicy kick are charred on the stovetop and finished in the oven. The recipe is a Yummly original created by Sara Mellas.

- 1/3 cup soy sauce (or tamari)
- 3 Tbsp. brown sugar
- 3 Tbsp. gochujang (or 1 Tbsp. Sriracha)
- 1 Tbsp. rice vinegar
- 1 tsp. sesame oil
- 2 cloves garlic
- 4 bone-in pork chops (about 1 inch thick)
- nonstick cooking spray
- 1 1/2 tsp. canola oil (for searing first set of chops)
- 1 1/2 tsp. canola oil (for searing second set of chops)
- sesame seeds (for serving)
- green onion (minced, for serving)

Directions
- Place the soy sauce, brown sugar, Gochujang, rice vinegar, and sesame oil in a gallon-sized zip-top bag.
- Peel and smash the garlic cloves. Add to the bag.
- Place the pork chops in the bag. Seal the bag, and shake to coat the meat. Transfer the bag to the refrigerator and marinate for at least 2 hours, or up to 8 hours.

The flavor of this dish, per the way I made it was excellent. I used boneless pork chops, because that is what I had in the freezer. I made the marinade per the recipe, including the gochujang. However, the marinade seemed to thick in my opinion. I've learned that to get a moist pork chop you need to brine it (water, brown sugar, kosher salt) for several hours prior to cooking it. This marinade had the major components (brown sugar and soy sauce (= salt))...... so I added a cup of water to it. I marinated the chops for about 4ish hours. My other departure from the recipe was to use my charcoal (The Big Green Egg) grill to cook them. Served with plain white rice. Very moist and tasty.

I probably messed up somewhere but it came out pretty tough and dry sadly. Aside from that it got a pretty boring response from the family and my 3 year old refused to even try it. It smelled delicious though, I'm thinking next time of making more sauce because what I had definitely wasn't enough, and maybe working on the cooking time to not dry it out.

The pork chops were very tough.

Used pork chunks instead of chops, maybe around 3 lbs. Naturally, it took longer than it said the chops would of but super tasty. Doubled the marinade and then cooked the leftover for a sauce.

Easy as pie and quick (I did the the marinade in the morning); did the sriracha vs gochujang and the only thing different was that I took the 3 minutes to TOAST the sesame seeds.
Wow this was great...over rice and an Asian type spinach on the side.
Dinner guest quality!

Winner, Winner! Pork Chop Dinner! Everyone enjoyed it. Will definitely make it again. I think that I'd cook it at a little higher temperature next time.
