Lamb was amazingly tender but i felt like the sauce was quite dull and needed more depth

Really good. Use 4-5 tbsp tomato sauce with 1-2 cups chicken stock instead. If possible, use clarified butter it does make the difference. Sauté the onion, add the spice mix, then add the tomato sauce to darken a bit before stirring in stock. Much better and more classic Rogan Josh color.
