Description
We've got a few tricks in our frying pan for creating this lighter Alfredo! For starters, simmering dried linguini in a skillet with a mixture of chicken broth and milk makes a deliciously creamy pasta without as much fat as traditional Alfredo recipes. Sauteed chicken makes it a square meal, while a small amount of cream and fresh basil added at the end lend this one-pan meal creaminess and freshness. As the pasta cooks, taste it frequently to determine when it’s done, as brands vary in cooking times. Feel free to add blanched broccoli, asparagus tips, or defrosted frozen peas at the end of cooking to complete the meal. The recipe, which makes 5 1/2 cups, is a Yummly original created by Ivy Manning.
Ingredients
- 1 1/4 lb. boneless skinless chicken breasts (2 pieces)
- 1 tsp. salt (divided, plus more to taste)
- 1/4 tsp. pepper (plus more to taste)
- 2 Tbsp. extra-virgin olive oil
- 1/2 cup sliced shallots (about 1 large)
- 3 garlic cloves (minced)
- 2 cups reduced-sodium chicken broth
- 1 cup whole milk (or 2% milk)
- 8 oz. linguini pasta (dried, broken in half)
- 1/2 cup heavy cream
- 3/4 cup finely grated Parmesan cheese (about 1 1/8 oz.)
- 1/4 cup fresh basil leaves (torn or chopped, plus a sprig or two for serving)
Directions
- Cut each chicken breast in half horizontally into even cutlets that are about 1/2-inch thick. Season all over with 1/2 tsp. salt and 1/4 tsp. pepper. Set aside.
- Heat olive oil in a large frying pan over medium-high heat. Add chicken to the pan and cook, turning once, until chicken is golden brown and no longer pink in the center, about 4 minutes per side; remove chicken from pan as it’s done. Transfer to a cutting board and set aside.
- Reduce heat to medium-low and add shallot to the pan. Cook, stirring frequently, until translucent, 1-2 minutes. Scatter garlic in the pan and cook, stirring constantly, until fragrant, 30 seconds. Pour in chicken broth and milk, add remaining 1/2 tsp. salt, and bring to a simmer, scraping up any browned bits on the bottom of the pan.
