- 3 Tbsp. tapioca flour (Minute, or cornstarch can be substituted, but I prefer tapioca)
- 1 pinch kosher salt
- 1 1/2 cups all purpose flour
- 1 1/2 cups old-fashioned rolled oats (not instant)
- 1 1/4 cups dark brown sugar (firmly packed)
- 1/4 tsp. ground cinnamon
- 1/4 tsp. kosher salt
- 10 Tbsp. unsalted butter (slightly softened and cut into small cubes)
