- 15 oz. chickpeas (1 can, cooked, drained and rinced)
- 1/2 cup quinoa (I used black quinoa)
- 1 1/4 cups water
- 1 Tbsp. soy sauce
- 3 cups spinach (chopped, rinsed)
- 1 clove garlic
- salt
- pepper
- 1 cup red cabbage (finely shredded)
- 1/4 cup roasted cashews (slightly crushed)
- fresh parsley (or coriander if you like it)
- crushed red pepper
- 1 tsp. turmeric
- 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. paprika
