Love this recipe! I make it often. It's so easy and quick, but so flavorful. I've added protein to it too, like chicken and tofu.

Made my quinoa slightly differently than the recipe recommended (chicken broth instead of water), but overall, this was really an incredible combination. I had this three days in a row and never got sick of it. So good and easy to make!

This was delicious! The flavors melded so nicely. The kalamata olives were the highlight for me. I am making it again this weekend☺️

Serving is more for one. I increased the quantities to make it more suitable for 4. Tasted great and family loved it.

Um, this is fan-frickin-tastic! I wanted something high in protein (I'm a vegetarian) and fiber for work lunches. I prepared it all on a Sunday and stored each item in a separate container so I could assemble it at work. I mixed the olive oil and lime with salt and pepper ahead of time and put it in a container and then drizzled it over the assembled bowl. It's so good I might go back for seconds. Seriously delicious!
