  • 2 red bell peppers
  • 1 yellow bell pepper (seeded and quartered)
  • 2 courgettes (small, or zucchini if you want to keep the Mediterranean theme going, trimmed and quartered. Courgettes contain selenium which helps protect cells from free radical damage, reducing the risk of cancers and heart disease. Selenium is also needed for thyroid function.)
  • 1 red onion (peeled and chopped thickly)
  • extra-virgin olive oil
  • 3 vine ripened tomatoes (large, chopped)
  • 1 clove garlic (peeled)
  • 1/2 tsp. dried oregano (– an all-round anti-bacterial, so protecting health and the immune system, keeping it strong and resilient.)
  • 1 cup water
  • 1/4 cup basil leaves (shredded or chopped or torn – this herb gives cardiovascular protection and is anti-inflammatory. Contains flavonoids which protect at a cellular level.)
  • 1 Tbsp. red wine vinegar

    I made six servings but wish I had of May 8. Needed more flavor so I added garlic salt and browned black Angus beef with the juices. Gave my husband a sample and he loved it so everything is good.
