This is a great recipe! I made it as it is written today, and my family really enjoyed it. I made a double recipe of the dressing, and added chipotle Chile's in adobe sauce and cayenne pepper to half, so I'd have 2 bottles of dressing. I need the heat. I still thought it needed more heat! Next time I make this I'm going to grill the corn a little, add roasted red peppers, black beans, and garnish with cilantro. Just my preference is all, there in nothing wrong with this as is!
