This dish was easy and delicious. Used fire-roasted canned tomatoes and added some creole seasoning.

This is great! I didn't have any tomato sauce so I blended some chopped tomatoes with tomato paste and added a half teaspoon of sugar. Also I put in a cup of diced celery and mushrooms in addition to the peppers and onions. Sprinkled grated parmesan over the top. Fantastic!!!
