This oven-braised barbacoa has often been described as better than any restaurant's. Try it for yourself to judge! The recipe is a Yummly original created by Sara Mellas.

- 1 yellow onion (medium)
- 4 cloves garlic
- 1 lime
- 2 Tbsp. vegetable oil
- 1 boneless beef chuck roast (about 4 lb.)
- 2 Tbsp. salt
- 2 tsp. ground black pepper
- 1 cup beef broth
- 1 can Hatch mild diced green chiles (1 can is 4 oz.)
- 3 chipotle peppers in adobo (plus more to taste)
- 1 Tbsp. light brown sugar (packed)
- 2 tsp. ground cumin
- 1 tsp. dried oregano
- 1/8 tsp. cinnamon

Directions
- Preheat the oven to 275°F.
- Cut the onion into 1-inch thick wedges. Remove the garlic cloves from their skins and roughly chop. Cut the lime in half.
- Set a large Dutch oven or oven-safe pot over high heat and add the vegetable oil.

I was missing some ingredients, so I had to sub chipotle seasoning blend for the chipotle peppers and a can of rotel for the other canned peppers. It still turned out delicious!

i would make it again, Ill probably try 4 hours in the oven to make it more tender.
