- 2 boneless New York strip steaks (1 inch thick, 6-8 oz. each)
- 1 tsp. salt (for steaks)
- 1/4 tsp. black pepper (for steaks)
- 1/2 tsp. garlic powder
- 1 green bell pepper (medium)
- 1 red bell pepper (medium)
- 1 yellow bell pepper (medium)
- 1 yellow onion (medium)
- 1 Tbsp. extra virgin olive oil (for vegetables)
- 1/2 tsp. salt (for vegetables)
- 1/4 tsp. black pepper (for vegetables)
- 1 Tbsp. extra virgin olive oil (for steaks)
- 1 1/2 tsp. salted butter

Directions
- Preheat the oven to 400°F.
- Line a large baking sheet with parchment paper. Set aside.
- Season the steaks liberally on both sides with the salt, black pepper, and garlic powder. Allow them to rest at room temperature while preparing the pepper and onions.
