- 6 Tbsp. fresh lime juice (2 limes, 2 lemons)
- 5 Tbsp. sugar
- 4 Tbsp. fish sauce (I like Thai Kitchen brand)
- 6 Tbsp. chili sauce (thai spicy thai, I like Thai Kitchen gluten free brand)
- 3 Tbsp. tamarind paste (asian markets or online)
- 1 Tbsp. brown sugar
- 1 1/2 Tbsp. chicken stock (organic)
- 2 pinches red pepper flakes (or to taste)
- 1 pinch kosher salt (or to taste)
- 4 Tbsp. vegetable oil (or sunflower)
- 4 garlic cloves (minced)
- 4 shallots (finely diced)
- 1 lb. chicken
- 2 lb. shrimp
- 4 eggs (lightly beaten)
- 3 cups bean sprouts (fresh)
- 1/3 cup fresh cilantro (finely chopped, about 1/2 of a bunch)
- 4 Tbsp. roasted peanuts
- 5 scallions (chopped, ends removed)
- 2 pkg. rice noodles (Pad Thai, I like Annie Chun’s)

Tried this as my usual recipe was removed but this just ain’t it for me sadly

This made a massive amount and I only used one box of noodles. delicious even though I substituted some Worcestershire sauce for the tamarind paste (as suggested by another reviewer) I did add some bok choi , sauted with garlic and shallots than removed and added back later. Just adds a little texture/ crunch. Added hot peppers from the garden for extra kick

Made it twice. First time I didn't have tamarind paste. I used orient worchestershire brown sugar and lime to sub and it turned out great. Second time I had the tamarind. Both were fantastic. I think next time I'll do a blend of both. Thank you for the great recipe!

Flavor was great! 2 pkgs of rice noodles were too many and I only used 3 TBSP sugar in the sauce which I prefer.

It was really good but there is no way it takes 20 minutes to prep. First of all, there is all the chopping of veggies - 20 minutes right there. Then, the unpeeled shrimp were half the price of the peeled ones (huge mistake). Next time I'll pay the extra $8/lb! The tamarind paste was lumpy so I had to strain the sauce. Other than the time, it turned out great! I couldnt find the spicy chili sauce but I found Pad Thai sauce and used that instead. Does anyone happen to know the Thai name for the spicy chili sauce? The asian market had at least dozen different kinds of chili sauce and chili paste and i didn't know which to choose. Also, I only used 1 pkg of rice noodles and it was almost too much. 2 pkgs would be way too much. I served it with those little pickled chilies they have at Thai restaurants. Thinly slice serrano chilies and marinate overnight in seasoned rice vinegar. Yum!

I modified this a bit based on what I had. It as good and I’d like to make it again a bit truer to the recipe.

Enjoyed this recipe better than the last I tried! Do note that this is probably around medium spicy with just the chili sauce and minimal red pepper.

Disappointed..... way too sour! First time using tamarind paste and think 3 Tbsp was too much. I wish I had read read reviews as think peanut butter would have been a good addition.

So so so delicious!
Ok so I didn’t have fish sauce and I substituted with a bot of soy sauce and ouster sauce - i am low on chilli flakes too 🙀
And used date syrup instead of tamarind sauce and less sugar, just 1 teaspoon
I used 2 lemons and actually added a Tbsp of peanut butter into the sauce..
I mean soooo sooo delicious!
And so easy!

A little spicier then I thought, but that could just be the brand/ type of chili sause I used. Ended up adding tofo and soaking the scallions in a vinegar for a little more flavor and adding a few spices. Pretty good overall. Would have been nice to thicken sause a big prior to adding to pan. Overall pretty good!

I put less sugar. A bit less fish sauce.
I used peanut butter 1.5 tablespoon as I didn’t have peanuts. Everyone loved it.

I used less fish sauce brown sugar and regular sugar and it still tasted amazing with less of that stuff. So less sodium and sugar.

Tastes great, the only change that I would make is to cut back on the lime juice. It was just a little overpowering but otherwise a great recipe.

Don’t forget the spicy Thai paste/sauce and not too many noodles.

Turned out very well, though not quite the taste I'm looking for. Used green onions instead of scallions, and only 3 eggs instead of 4 (that's all I had). It was spicy, so you could probably skip the red pepper flakes if you wanted to.
