Description
Honey, orange, sweet spices, and rich-tasting Medjool dates flavor this moist and dense almond-flour cake. The pretty Bundt pan shape and generous size make it equally appropriate for celebrations as for an afternoon treat. Use ghee (Indian-style clarified butter that has had the milk solids removed) or coconut oil in place of butter if you’re following a strict Paleo diet. The recipe is a Yummly original created by Caroline Wright.

- unsalted butter (softened, for pan; or use coconut oil)
- 3 cups almond flour
- 1 Tbsp. ground cinnamon
- 1 Tbsp. ground ginger
- 1 tsp. salt
- 1 tsp. baking powder
- 15 medjool date (15 dates are 9 ounces)
- 1 Tbsp. orange zest (finely grated; 1 orange is about 1 Tbsp. zest)
- 1/2 cup honey
- 6 large eggs
- 1 cup unsalted butter (melted and cooled, for cake)

Directions
- Preheat oven to 350°F. Brush or rub inside of a 10-12-cup Bundt pan with softened butter.
- Put almond flour, cinnamon, ginger, salt, and baking powder in a large bowl and whisk together.
- Pit dates. Put dates, orange zest, honey, and eggs in a blender and process until smooth. Scrape insides of container. Open top of blender lid and with motor running, gradually add melted butter. Process until well blended, thick, and pale, 1-2 minutes.

Easy to make, recommend buying pitted dates... unfortunately didn’t taste good
