- 60 grams celery stalk (coarsely chopped)
- 90 grams carrot (cut into thick rounds, scrub and use unpeeled, if you like)
- 225 grams napa cabbage leaves (halved lengthwise then cut crosswise into large pieces)
- 1 bunch cilantro (1 ounce | 30 grams, stems and leaves coarsely chopped)
- 2 star anise (16 robust points total)
- 2 whole cloves
- 1 1/2 tsp. coriander seeds
- 1 1/2 inches cinnamon stick
- 2 inches ginger (section, peeled, cut into thick slices, and bruised)
- 1 yellow onion (medium-large, 9 oz | 270 g, halved and cut into thick slices)
- 1 1/2 tsp. fine sea salt (plus more as needed)
- 1 1/2 Tbsp. fish sauce
- 1 tsp. organic sugar (optional)
- 2 tsp. maple syrup (optional)
- 1 tsp. organic sugar (optional)
- 300 grams rice noodles (dried narrow flat, or 1 pound, 450 g fresh pho noodles)
- 4 large eggs (at room temperature)
- 8 oz. chicken meat (rotisserie, torn into pieces about 1⁄4 inch, 6 mm thick)
- 60 grams red onion (or yellow, thinly sliced against the grain and soaked in water for 10 minutes)
- 2 thinly sliced green onions (green parts only)
- 5 grams chopped fresh cilantro (leafy tops only)
