Really good. I would double the amount of mushroom bacon next time but otherwise it’s a keeper!

The mushrooms were really tasty and the highlight of the meal, but the pasta/sauce did not have much flavor. I would make it again with some tweaks.

I'm not a fan of cashew sauce as I find it a bit stodgy, so I replaced it with soy cream, with several cloves of sauteed garlic, nooch, celery salt, chilli flakes and black pepper. I also used 3x the mushrooms. Delicious

Simple vegan alternative to carbonara that tastes great. Wonder how the mushrooms would taste if roasted instead of fried.
