Loved it! Added some porcini powder for a little more depth of flavor. My partner thought it was a little boring (he wanted bacon in it). Would make again just as is for me tho!

I like to switch out most of the potatoes out for cauliflower. So I would use a large head of cauliflower, 1 large yukon gold, and problaby an extra cup of broth. I always serve it with extra old cheddar cheese, yummy!!

This has become my favorite soup. Instead of tobasco I use red pepper flakes. Also opt to only blend half of the pot. I am a vegetarian, so I use veggie broth. Thank you for such an awesome soup. I have served it at many gathering and it is always a huge hit. I get asked for the recipe over and over. :)
