I added in two carrots finely sliced with the potatoes and broccoli. I think my leeks were really big too so added another 2 c vegetable stock and an extra 1/2 c cream. I wanted the soup thicker, especially since I added more liquid, so I used an immersion blender to purée some of the soup. I just added the croutons and bacon for garnish instead of making the crumble. My 3 year old loved it after I added a little crème fraiche for her. Big plus for me if she will eat veggies. Very tasty soup and fast to put together once your veggies are all chopped.

I replaced the broccoli with green beans at the risk of overcooking the broccoli, and it turned out beautifully!

The recipe turned out very well. This version is a more rustic take on the classic puréed standard. I enjoy the textures, heartiness. The crumble is a nice finish. I added some dress time, and dried marjoram.
