Excellent. A real go to for me

Roux never got to a peanut butter color, just stayed light brown. Didn’t use okra because it’s nasty. Would
definitely use more Cajun seasoning than it calls for. Mix some in with the broth.
Had to use a slurry to thicken it after cooking when 5 minutes on sauté in my instant pot was still watery.
