This is a very good dish! If you want to, you can make this a Whole30 meal or a prediabetes/diabetes meal, as provided below.
Whole30
1) using chicken stock/broth in place of the white wine (as suggested)
2) leaving out the cheese
Prediabetes / Diabetes
1) use low sodium chicken stock/broth
2) leave out the salt
3) use no salt diced tomatoes (I used no salt fire roasted diced tomatoes)
Here are some suggested improvements.
1. Use the juice from only one of the cans of diced tomatoes and drain the other. Some people have mentioned that if you do not do this, it is too water, and in my case, they are correct.
2. Cook the shrimp and sauce separately. The shrimp does not absorb the favors of the sauce, so it would be better to saute' the shrimp in clarified butter, garlic, ginger (and other spices that you think would work well with it).
3. So that the spices of the sauce can marry well together, I recommend cooking the sauce longer, like at least an hour. If you do this, then I suggest the following 2 choices: 1) cook the shrimp separately; 2) take the sauce out of the oven, and add the shrimp about 10-15 minutes prior to finishing the cooking of the sauce. Personally, the next time I make this, I will cook the shrimp separately so that I can determine when the shrimp is done cooking.

Really versatile and easy!
I’ve made this recipe at least half dozen times in the past couple months. We serve over/with quinoa. I’ve added chopped olives, peppers, capers, extra diced tomato, just about anything you want. I have read some had tough shrimp but mine have always been perfect. I fold the shrimp in, quickly cover with feta, and directly in the oven it goes. I think if you let it simmer it could easily get overcooked.

For such a limited ingredient list, the flavor was there but I probably won’t make it again. Used jumbo shrimp and it got rubbery after following the cooking directions to a T. Maybe I did something wrong?

Turned out surprisingly good! I love garlic so I added about 5 cloves. After the onions and garlic sautéed a bit I seasoned it with Italian seasoning and put a splash of balsamic vinaigrette in there and let it fry up a bit to release the flavors. I added a little red pepper flakes to spice it up. Everything else was pretty much the same. I paired it with a nice Greek salad and thin noodles
