Description

- 14 oz. smoked beef sausages (such as Hillshire Farms)
- 1/2 cup yellow onion (chopped)
- 1/2 cup green bell pepper (chopped)
- 2 Tbsp. salted butter (divided)
- 2 tsp. Creole seasoning
- 1 tsp. dried oregano
- 1 1/4 tsp. salt (divided)
- 1 tsp. black pepper
- 2 cans red kidney beans (15 oz. per can; undrained)
- 1 cup chicken broth
- 1 bay leaf
- 2 cups water
- 1 cup long-grain white rice

Directions
- Slice sausage on a diagonal about 1/3 inch thick.
- Heat a Dutch oven or other 5- to 6-qt. pot over medium heat. Sear sausage, turning once, until browned, about 5 minutes. Transfer sausage to a plate and set aside.
- Add 1 Tbsp. butter, the onion, and bell pepper to the Dutch oven. Cook, stirring often, until vegetables are softened, about 4 minutes. Add Creole seasoning, oregano, 1 tsp. salt, and the pepper. Cook, stirring occasionally, until onion is translucent, about 2 minutes more.
