- 1 Tbsp. olive oil
- 1 yellow onion (large, chopped)
- 1 carrot (large, or 3 small, chopped)
- 2 stalks celery (chopped)
- 2 bell peppers (seeded and chopped, I like to use 2 different colours, usually red and yellow, but you can use whichever you like)
- 3 cloves garlic (finely diced)
- 3 Tbsp. chipotles in adobo sauce (finely chopped, I usually just use 3 of the chilis)
- 2 tsp. ground cumin
- 1 Tbsp. chili powder
- 1 tsp. dried oregano
- 2 tsp. salt
- 3 cups diced tomatoes (canned, 28-ounce can, with their liquid)
- 3 cups water
- 1/4 cup buckwheat groats
- 3 cups red kidney beans (28-ounce can, drained and rinsed)
- 1 1/2 cups black beans (15-ounce can, drained and rinsed)
- 2 cups frozen corn

Used crushed fire roasted tomatoes, one can white beans, one black beans, and one kidney beans. Ancho Chili powder instead of regular chili powder. Seemed like it took forever but way worth the wait. Finally, a vegetarian chili my husband will eat. Been searching for years and nearly gave up. Glad I didn’t bc this one was a hit with the whole family.
3-12-23 made it for a second time. It makes more than 4 servings. I’d say serves 6. Still turned out great.

It was filling and delicious! We made it less spicey than it called for but the combination of flavors was wonderful. Enjoyed tremendously!

Fixed it for a church social and it was great. I only used 2 of the chipotle peppers and it had a good bid of heat(I like spicy though). Also had to substitute quinoa for the groats as I live in a small town and it wasn't available. Will definitely fix again.

Turned out great. Just spicy enough! Used quinoa instead of buckwheat.

This was a perfect recipe. Quick and easy, all in the one pot, the smell and taste was amazing. Thank you for sharing.
Only difference I had was swapping out the celery for bok choy.

Instead of suggested seasonings I used a package of Chili seasoning & added a jalapeño! Turned out great!!!

Really nice dish - I'm always running short on time with two small hungry kids so reduced simmering time to 40+15 mins instead of 45+30 mins. Also replaced buckwheat with quinoa. Came out great and kids loved it.

It came out really good. I didn't have enough onions so I used 2 packs of lipton onion soup and I was missing the buckwheat. Either way this is a awesome chili, the flavor is just right, not spicy.

OMG I am in love with this!! Me and my family loves it. I added a dash of worchestire sauce, and some unsweetened cocoa powder, and topped it with avocado and it came out AMAZING! This meal is perfect for vegetarians who dont want to miss the meat. You won't at all and its beautiful as well as beautiful for you! Reccomend to anyone. I served it over rice but you could serve it over roasted quinoa too. This meal deserved every star, thank you for this recipe!
