- 3 lb. ham hocks (optional)
- 16 cups water (or chicken stock in all, You may not use all of this)
- 2 1/2 cups chopped celery (finely)
- 2 cups finely chopped onions
- 2 cups green peppers (finely chopped)
- 5 bay leaves
- 2 tsp. white pepper
- 2 tsp. dried thyme leaves
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. dried oregano
- 1/2 tsp. fresh ground black pepper
- 1 Tbsp. Tabasco
- 1 tsp. red pepper (preferably cayenne)
- 2 lb. smoked sausage (such as kielbasa or Andouille, I buy Saags chicken Andouille cut into large chunks, Depends on if you are using ham hocks)
- 4 1/2 cups rice
