- 5 new mexican chile
- 4 chile de arbol
- 1/2 cup red onion (chopped)
- 2 garlic cloves (peeled)
- 1/2 cup oil
- pepper
- salt
- 2 Tbsp. coffee grounds (fresh)
- 1 Tbsp. cilantro (chopped)

Directions
- Truss loin with string every 1.5-2” to make even shape.
- In sauce pot, put dry chiles and cover with water, bring to a boil, turn off heat and let sit for 30-60 minutes, drain.
- In blender, add soaked chiles, onion, garlic, oil, and puree until smooth.
