Sauce is good, but do the roux inside the sauce, not outside. Beef is beautifully done, but chewy. I would recommend cooking at 425 for 30 minutes.

Beyond doubt one of the best roast I’ve made. Marinaded overnight, cooked to 124, rested and ended up at 133. Beautifully done.

Directions were not very clear...place in oven covered or uncovered? Use a shallow pan or is a Dutch oven ok?
Other than that it was easy to do and smells delicious while cooking!

Turned out great. I didn’t have gravy master so I roasted the beef on a bed of carrots, onions, celery, leeks and thyme and used the marinade to make the gravy.
