First of all, I put both bags in the microwave for about 3 min. to defrost.
It was a little bland, so I put a little spin on the seasoning: For 2 bags of vegetables I used 1/2 tsp. salt, 1/4 tsp. granulated garlic, 1/4 tsp. onion powder, 1/2 tsp. lemon pepper & 1/4 tsp. black pepper plus the 2 tsp. Italian Herbs to the 32 oz. of vegetables.
Roast for 20 min. Tossing after 10 min. Tasting pretty good! ... wanting to toast for 10 additional minutes to get that little char... Meanwhile,
in a hot cast iron skillet I quickly brown 2.5 lbs. of bite size boneless, skinless chicken thighs that were seasoned with salt, lemon pepper, black pepper & 2 Tbsp. basil pesto. Then place chicken on pan with vegetables and return to oven for 10 more minutes. Turned out to be a easy, healthy & delicious meal. Note: used this amount of meat to 4 bags of the vegetables. It was a good balanced ratio of veg. to meat.

DELICIOUS, I also used broccoli by itself (my favorite). Leftovers were even better for lunch Thanks
